After Paul Bocuse and Joël Robuchon, other founders of modern French cuisine who passed away in 2018, one of France’s best-loved chefs is gone, aged 92. Having attained fame with his brother Jean for revolutionising French cooking, he invented dishes that made world gastronomic history (such as his 1962 salmon with sorrel). In the 1990s he yielded his crown to his son Michel, and the Maison Troisgros retains the longest-running current three-starred Michelin ranking.
