Italian cuisine as a UNESCO candidate

The first meeting of the research committee for Italian cuisine’s UNESCO candidature has been held via Zoom.
All members were present, four being Academicians. Besides President Paolo Petroni, they include the honorary Academicians Alberto Capatti (Lariana), Massimo Montanari (Imola) and Vito Teti (Vibo Valentia). The main goal of the meeting (moderated by the Director of La Cucina Italiana magazine, Maddalena Fossati Dondero) was to define the element, meaning the candidature’s theme (subject and title). The many suggestions were all united by their emphasis on the ‘biodiversity’ of our cuisine, so varied and bound to the land. General coordination and secretarial duties were entrusted to Silvia Sassone of Spoongroup.
